Gooseberry and Elderflower Water Ice Recipe

Ingredients

1l Gooseberry and Elderflower Syrup
white of 1 small egg

Gooseberry and Elderflower Water Ice Preparation:


Method:

Pour the goosebery and elderflower syrup into a bowl. Add the egg white to a clean and dry bowl then beat until it forms soft peaks. Fold the beaten egg white through the gooseberry and elderflower juice mixture.

Turn the mix into a plastic dish, place in the refrigerator and allow to freeze to a mush (about 30 minutes). Stir thoroughly at this point to break any large ice crystals then freeze for a further 30 minutes before stirring briskly once again. Now leave to freeze completely (at least 3 hours) before serving.
