Gorski Kebab
(Ranger's Delight) Recipe

Origin: Bulgaria      Period: Traditional

Ingredients:

450g mutton (or lamb), cubed
2 large onions, chopped
1/2 tsp mint, chopped
1 garlic clove, chopped
salt and freshly-ground black pepper, to taste
250ml white wine
200g tomato purée
3 tbsp butter
3 tbsp fresh parsley, chopped

(Ranger's Delight) Preparation:


Method:

Combine the meat with the onions, mint, garlic, salt, black pepper, wine and tomato purée in a bowl. Stir thoroughly to combine then cover and set in the refrigerator for 3 hours to marinate.

After this time remove the meat from the marinade (reserve the marinade) then melt the butter in a pan and use to fry the meat until well browned all over. Now add the remaining marinade to the pan, bring to a boil, reduce to a simmer, cover and cook for 40 minutes, or until the meat is tender.

Turn into a serving bowl, garnish with chopped parsley and serve accompanied by rice or pasta.
