Whereas many people think of Kent when they think of fruit-associated counties, Gloucestershire has long been considered the 'Orchard of England' and until quite recently it was the largest producer of apples, pears and plums in the UK. This recipe dates back to the 1920s, they heyday of apple production in the orchard county. Ingredients:
225g cooking apples, cored
Gloucestershire Apple and Cheese Cake Preparation:Method:Grate the apples in a bowl (retain the peel and juice). Meanwhile cream together the butter and sugar until light and fluffy. Lightly beat the eggs together then add to the butter mixture a little at a time, beating well after each addition. Mix to combine thoroughly, then stir-in the apples, cheese and the almonds. Sift together the flour ,bicarbonate of soda and the baking powder in a separate bowl and fold into the cake mixture. Turn the resultant batter into a well-greased 1kg loaf tin. Smooth the top then place in an oven pre-heated to 180°C and bake for about 50 minutes, or until a skewer inserted into the centre of the cake emerges cleanly. Allow the cake to cool in the tin for 10 minutes, then turn out onto a wire rack and allow to cool completely. |
