Glazed Ham with Dried Cherry Caramelized Onions Preparation:Method:Place the ham on a rack inside a shallow raosting tin then transfer to an oven pre-heated to 160°C and roast for 40 minutes per kg, or until a meat thermometer inserted into the ham registers 60°C. Meanwhile, combine 2 tbsp honey, 1 tsp cider vinegar and the mustard in a bowl. Use this to glaze the ham during the final 5 minutes of roasting. Meanwhile, melt the butter in a pan then fry the onions for about 10 minutes, or until the onions are tender and lightly browned. Add the dried cherries along with the remaining cider vinegar, honey and cardamom. Bring to a simmer and cook, uncovered, for 5 minutes.
