Ingredients:
1/2 fully cooked cured ham — shank end (about 3.5kg)
Ginger Rum Glazed Ham Preparation:Method:Trim the ham to remove the majority of skin, leaving a layer of fat and a collar of skin around the shank bone. Trim the fat so that you only have a layer about 1cm thick then score this in a diamond pattern. Place the ham on a rack in a roasting pan and transfer to an oven pre-heated to 175°C for 55 minutes. Meanwhile, combine the ginger, sugar and rum in a blender. Spoon this glaze over the ham, spreading it evenly with the back of a spoon. Return the ham to the oven and roast for a further 35 minutes, or until the glaze is brown and bubbling. Transfer the ham to a warmed plate, cover and allow to stand for 15 minutes then garnish with parsley, take to the table and carve. |
