Ginger, Macadamia and Apricot Slice Recipe

Origin: New Zealand      Period: Modern

Ingredients

250 g packet ginger biscuits
80g macadamia nuts roughly chopped
60g finely-chopped dried apricots
60ml condensed milk
1 tbsp ground ginger
60 g butter
40g brown sugar

Ginger, Macadamia and Apricot Slice Preparation:


Method:

Break the biscuits up in a food processor until you have fine crumbs. Add these along with the nuts and apricots to a bowl. Gently melt the butter and add the condensed milk. Still on low heat add the brown sugar and wait until it dissolves, stirring frequently. Add the liquid to the dry ingredients and mix thoroughly. Press into a lined square baking tin and refrigerate until set.

Once set tip out of the tin and cut into squares.
