Origin: Libya      Period: Traditional

Ingredients:

200g sugar
560g flour
100g ground almonds
200g butter or ghee
cold water to bind
sugar to dust

(Libyan Crescent Biscuits) Preparation:


Method:

Heat the butter or ghee in a pan until melted. Take off the heat and allow to cool. Manwhile, combine the sugar, flour and ground almonds in a bowl. Add the melted butter and mix to combine. Add just enough cold water to bring the mixture together as a firm dough. Turn onto a lightly-floured work surface and roll out about 6mm thick. Cut into crescent shapes and transfer to a lightly-greased baking tray. Dust the tops with a little sugar then transfer to an oven pre-heated to 180°C and bake for about 12 minutes, or until coloured a golden brown.

Remove from the oven, sprinkle a little more sugar over the top then transfer a to a wire rack to cool before serving.
