Ghanaian Jollof Rice II
(Ghanaian Jollof Rice) Recipe

Origin: Ghana      Period: Traditional

Ingredients

This is more a 'conveninece' version of Jollof rice rather than the traditional version made completely with fresh ingredients. It's a style that's growing in popularity with increasing urbanization.

1.4kg chicken, cut into serving pieces
900g whole tinned tomatoes, chopped (reserve liquid)
500ml water
2 tsp salt
1/4 tsp black pepper
150g uncooked long-grain rice
225g cooked smoked ham, cubed
1/4 tsp ground cinnamon
1 tsp hot chilli powder (or to taste)
350g cabbage, coarsely shredded
300g fine beans (cut into 1.5cm lengths)

Ghanaian Jollof Rice II
(Ghanaian Jollof Rice) Preparation:


Method:

Combine the chicken, tomatoes (with their liquid), water, salt, and black pepper in a large flame-proof casserole or Dutch oven. Bring to a boil, reduce to a simmer then cover and cook for about 30 minutes. Remove the chicken at this point and set aside then stir-in the rice, ham, cinnamon and chilli.

Return the chicken to the pot along with the cabbage, green beans and onions. Bring back to a boil then reduce to a simmer, cover and cook for about 30 minutes, or until the chicken has cooked through.

Remove the chicken, spoon the rice and vegetables onto a serving tray then arrange the chicken on top and serve.
