Ingredients:
1 (10 to 12 pound) Georgia country ham (about 5kg)
Georgia Country Ham Preparation:Method:The Georgia Country ham is, essentially, a whole cured ham (the whole pig leg). However, if you do not have a very large roasting tin you should remove the hock for this recipe. Take the prepared ham joint and soak over night in a bucket of cold water (you can also soak in the sink), making sure you change the water at least 3 times to remove as much of the excess salt as possible. The following day scrub the ham with a stiff brush to remove any hairs. Combine the bourbon, brown sugar and water then press well into the fat of the ham. Cover tightly with foil then transfer to your roasting dish and place in an oven pre-heated to 95°C and roast very slowly for 8 hours. When the ham is done allow to rest for 20 minutes (still in its foil wrapping) before carving and serving. This ham can be served either warm or cold. |
