Gefullte Kalbsbrust
(Stuffed Veal Breast) Recipe

Origin: Germany      Period: Traditional

Ingredients:

225g minced beef
115g minced pork
1 egg
140g soft breadcrumbs
1 tbsp lemon juice
1/8 tsp freshly-grated nutmeg
1/2 tsp salt
freshly-ground black pepper, to taste
1.8kg breast of veal, with brisket
3 tbsp butter
2 tsp paprika
2 bay leaves
6 whole cloves
1/2 tsp rosemary
1/2 tsp basil
500ml water

Gefullte Kalbsbrust
(Stuffed Veal Breast) Preparation:


Method:

Combine the minced meats, egg, breadcrumbs, lemon juice, nutmeg, salt and black pepper in a bowl then mix thoroughly to combine.

Create a pocked in the veal breast and sew closed or secure with cocktail sticks. Melt the butter in a large pan and use this to brown the veal roast all over then transfer to an oven-proof casserole dish. Meanwhile, add the paprika, bay leaves, cloves, rosemary, basil and 500ml water to the pan drippings. Stir to combine, then bring to a boil and pour over the meat in the casserole.

Cover and transfer to an oven pre-heated to 160°C and bake for about 2 hours, or until the veal is tender and cooked through. Slice the veal and arrange on a serving plate. If desired, you can strain and thicken the pan liquid to serve asa sauce.
