(Spiced Roast Chicken) Recipe

Origin: South Africa      Period: Traditional

Ingredients

1 chicken, cut into serving pieces
240ml water
450g potatoes, diced
1 onion, finely chopped
pinch of freshly-grated ginger
1 garlic clove, crushed
⅛ tsp turmeric
⅛ tsp ground fenugreek
⅛ tsp ground cumin
⅛ tsp ground fennel seeds
⅛ tsp ground allspice
oil
salt

Gebraaide Hoender
(Spiced Roast Chicken) Preparation:


Method:

Rub each piece of chicken with salt and place the pieces in a casserole dish with 240ml water. Cover and simmer gently. After about 15 minutes add the potatoes and a little oil, if necessary as well as the onion. Cook for a minute then add the spices, the ginger and the garlic. Simmer for an additional 30 minutes then serve with rice and/or vegetables.
