Garlic Mustard Pesto Recipe

Origin: Italian      Period: Traditional

This really is by far the best way to prepare garlic mustard as it fully brings-out the flavour of this wonderful plant.

Ingredients

4 garlic cloves, crushed
3 tbsp garlic mustard taproots
90g parsley
150g garlic mustard leaves
120g basil
200g pitted olives (green or black)
400g pine nuts
120ml mellow miso
120g freshly-grated Parmesan cheese
360ml olive oil, or as needed

Garlic Mustard Pesto Preparation:


Method:

Add the garlic and garlic mustard roots to a food processor and chop roughly before adding the parsley, garlic, garlic mustard and basil. Chop finely then add the nuts and chop coarsely.

Now add the olives, Parmesan, olive oil and miso and process until you've created a coarse paste.
