600g potatoes
Game Chips Preparation:Method:Peel the potatoes then slice wafer thin with a mandolin or a Japanese vegetable slicer. Place in a bowl, cover with water and allow to soak for 20 minutes to remove the excess starch. Fill a deep fryer with oil and heat to 190°C. Drain the potatoes and dry thoroughly on kitchen paper. Add to the oil in small batches and fry for about 2 or 3 minutes per batch, so that the potato slices become crisp and golden. Drain on paper towels and season with sea salt and black pepper.
