Gambry à la Gabesienne
(Gabesian Shrimp Stew) Recipe

Origin: Tunisia      Period: Traditional

Ingredients:

2 tbsp olive oil
1 onion, finely chopped
4 garlic cloves, finely chopped
1/2 tsp ground cumin
1 tsp harissa
1.35kg prawns (in shells)
1/2 tsp salt
1/2 tsp freshly-ground black pepper
6 sprigs parsley, finely chopped
2 tbsp lemon juice

Gambry à la Gabesienne
(Gabesian Shrimp Stew) Preparation:


Method:

Heat the oil in a pan then add the onion and garlic. Fry for 2 minutes then ad the cumin and harissa and fry for 1 minute more before adding he prawns, salt, black pepper, parsley and lemon juice.

Fry for 2 minutes then cover the pan and allow the contents to steam for 2 minutes more, or until the prawns are pink and cooked through. Transfer to a warmed bowl and serve immediately.
