Fritters (bite-sized pieces of fruit, meat, vegetable or cheese dipped in a seasoned flour batter and deep fried) are popular world-wide and are very popular in Western Africa. Typically they are made with fruit or maize. Ingredients:For the Batter
400g plain flour Main Ingredients (Examples Only)
maize (either fresh or canned, drained)
Fritters Preparation:Method:To make the batter simply mix all the ingredients together in a bowl (add more water if it's too thick). You're aiming for a batter that's thick enough to coat a spoon without dripping. Add oil to a wok or deep pan to a depth of about 5cm and heat to 190°C. If using large ingredients such as pineapple pieces dip the ingredient into the batter and drop into the hot oil. Fry until golden brown, turning a few times. If using small ingredients (sweetcorn or okra, for example) drop the ingredients into the batter then use a spoon to transfer into the batter. |
