Ingredients:
450g uncooked soba noodles
Fried Noodles Preparation:Method:Prepare the noodles according to the package directions then drain and set aside. Meanwhile, in a large non-stick wok combine the soy sauce, brown sugar and chilli. Stir until the sugar has dissolved then add the onions, garlic and ginger. Cook for 2 minutes then add the mange tout, spring onions and lime zest. Toss and continue cooking until the mange tout are tender (about 2 minutes). Stir-in the bean sprouts and tofu and continue cooking for about 3 minutes, or until the bean sprouts are slightly wilted. Add the noodles and toss to combine. Season with the lime juice, transfer to a warmed serving bowl then garnish with the coriander and serve. |
