Ingredients
500g sugar
French Rocks Preparation:Method:Stir together the sugar, cream of tartar and water in a pan over high heat until the mixture comes to a boil. Continue boiling for 5 minutes then turn onto a well-greased baking dish, sprinkle with a few drops of flavouring essence (any you desire), and fold the toffe over, lengthways, using a wooden spoon. Allow to cool until cold enough to handle then keep pulling the toffee until white and firm. Form into a long roll and cut into about 2cm pieces with a decent pair of scissors. This is a very versatile basic toffee and you can make a whole range by varying the flavourings and colourings you use. |
