Fisherman's Brewis Recipe

Origin: Irish      Period: Traditional

Brewis was a traditional meal in Victorian times that was typically made with meat broth and stale bread. Here a fish version is presented and this was often served as a food for recouperating invalids.

Ingredients:

300g salt pork
900g fresh cod fillets
5 slices stale bread
2 tsp dried dulse flakes

Fisherman's Brewis Preparation:


Method:

Roughly tear up the stale bread, place in a bowl then cover with water and set aside to soak over night. The following day, dice the pork and fry in a non-stick pan until gently browned. Add the fish and cook until the meat can be easily flaked with a fork. Remove the fish from the pan then remove the bones, flake and return to the pan then drain the bread, squeeze out the excess water and add to the pan. Bring the mixture to a boil, and mash to a paste.

Transfer to a serving bowl, garnish with the dulse flakes and serve immediately.
