This is a classic recipe from Sydney's ever-growing fusion food scene Ingredients:
4 large white fish fillets
Fish in Coconut Milk Preparation:Method:Combine the turmeric and salt then rub liberally into the fish. Meanwhile, heat the oil in a pan and use to gently fry the onion, garlic, ginger and chillies for about 10 minutes, or until soft. Take 180ml of the coconut milk and mix with 180ml water before pouring on top of the onion mixture. Bring to a simmer then add the fish and cook for 10 minutes before adding the remaining coconut milk. Stir-in the lemon juice and serve with rice. |
