Fillet of Beef with Tasmanian Pepper Berries Recipe

Origin: Australia      Period: Traditional

Though largely known only in Australia, Tasmanian Pepperberry is becoming available through a small number of on-line spice suppliers. It is an amazing spice with ten times the kick of black pepper.

Ingredients:

800g beef sirloin, well trimmed
1 tbsp black poppy seeds
1 tsp Tasmanian pepper berries
salt, to taste

Fillet of Beef with Tasmanian Pepper Berries Preparation:


Method:

Crust the spices in a pestle and mortar along with the salt. Pat the mixture into the meat, coating on all sides, then wrap securely in foil.

Place the foil parcel into a hot griddle pan and cook for 4 minutes, without turning. Now turn and keep turning for a few minutes for about 12 minutes (this yields a rare steak, cook for a further 8 minutes for medium).

Remove from the pan and allow to cool before serving. Slice and serve with green and spicy chutneys.
