Festive Sprouts Recipe

Origin: Britain      Period: Modern

This is an ideal accompaniment to Christmas dinner, but can be used with other strong meats such as game.

Ingredients

900g fresh baby sprouts washed and halved
200g streaky bacon (smoked or unsmoked depending on taste)
300g fresh chestnuts shelled (or use canned)
Soy sauce
25g butter
salt and pepper to season

Festive Sprouts Preparation:


Method:

Chop the bacon crosswise into 0.5cm strips then fry in a little oil for 2–3 minutes, or until opaque then add the sprouts and stir-fry for about 4 minutes. Add the chestnuts and stir-fry for 2 minutes (for a richer flavour 1 tablespoon of dark soya sauce can be added at this point). Then add the butter and allow to melt and coat the sprout mixture.
