Fasole "Minīită"
("False" Beans) Recipe

Origin: Romania      Period: Traditional

In Romanian, Mintita literally means a 'lie'. This dish is really a 'deception' in that the beans are mashed to a paste and do not look like beans any more.

Ingredients

250g dry beans (any kind, or a mix)
60ml olive oil
2 small onions, finely chopped
salt and freshly-ground black pepper, to taste
paprika, to garnish

("False" Beans) Preparation:


Method:

Add the beans to a bowl, cover with water and set aside to soak over night. The following day, drain the beans then place in a large pan, cover with plenty of water, bring to a boil then reduce to a simmer, cover and cook for about 2 hours, or until completely tender.

Drain the beans, transfer to a bowl then mash thoroughly. Whilst whisking constantly slowly add the olive oil. The beans will fluff up and become aerated. Mix in the onions then season with salt and black pepper. Allow the dish to cool, transfer to a serving bowl, garnish with the paprika and serve.
