Fakhthat Karoof Fil Forn
(Libyan Roast Leg of Lamb) Recipe

Origin: Libya      Period: Traditional

Ingredients:

1 leg of lamb
4 tbsp butter
1 tsp salt
10 garlic cloves, cut into slivers
250ml lemon juice
1 tsp hot chilli powder
1/2 tsp freshly-ground black pepper

(Libyan Roast Leg of Lamb) Preparation:


Method:

Combine the spices and rub all over the meat. Using a sharp knife make holes in the lamb and stuff the garlic slivers into these. Place the meat in a baking dish and sprinkle with the lemon juice. Place in the refrigerator and allow to marinate for 2 hours.

Dot the meat with the butter then place in an oven pre-heated to 100°C and roast for 1 hour then increase the temperature to 180°C and roast for 3 hours. Allow to rest for 10 minutes, covered with foil then carve and serve with rice or couscous.
