Essig Krautersauce
(Viennese Salad Dressing) Recipe

Origin: Austria      Period: Traditional

Ingredients:

1 tbsp shallots, chopped
1 tbsp capers, chopped
1 tbsp parsley, chopped
1 tbsp chervil, chopped
1 tbsp chives, chopped
240ml olive oil
120ml tarragon vinegar
1 tsp salt
1/2 tsp freshly-ground black pepper

(Viennese Salad Dressing) Preparation:


Method:

Combine the shallots, capers, parsley, chervil, and chives with he oil. Stir well then set aside to infuse for at least 1 hour. After this add the vinegar, salt and black pepper.

This clasic dressing is traditionally used with meat, fish, vegetables and salads. Often, rive and chopped hard-boiled egg is sprinkled over the dressed food. The dressing can also be heated as a warm dressing.
