Eritrean Vegetable Bowl Recipe

Origin: Eritrea      Period: Traditional

Ingredients:

3 large onions
4 large carrots
3 large potatoes
1/4 white cabbage
60ml oil
1 head garlic, peeled and crushed
1/2 tsp ground ginger
1/2 tsp turmeric
1/2 tsp black pepper
1 tsp salt
900ml water

Eritrean Vegetable Bowl Preparation:


Method:

Peel the vegetables and cut into small cubes. Heat the oil in a large pan and add the vegetables and garlic. Cover and fry for 3 minutes then add the ginger, turmeric, salt and black pepper. Mix well, add the water, stir and cook on very low heat for 40 minutes. Mash lightly and serve hot.
