These date from the days of the British Empire and were a traditional sandwich biscuit (cookie) covered with icing. Ingredients
250g sifted flour
Empire Biscuits Preparation:Method:Cream the butter and sugar together then add the egg and finally flour. Make into a very stiff paste (add more flour if needed) and roll out some 1cm thick before cutting into rounds. Place on a greased baking tray and cook in an oven pre-heated to 170°C until golden brown. Allow to cool completely then spread jam (whichever your favourite is) on one biscuit round and place another on top. Coat the upper biscuit with glacé icing and place half a glacé cherry in the middle. |
