Ingredients
450g elderberries
Elderberry Water Ice Preparation:Method:Combine the sugar, water and elderberries in a pan and heat gently until the sugar dissolves and the elderberries soften. Take off the heat and set aside to cool. Pass the elderberry syrup through a sieve with the back of a spoon to remove the seeds. Add the egg white to a clean and dry bowl then beat until it forms soft peaks. Fold the beaten egg white through the elderberry juice mixture. Turn the mix into a plastic dish, place in the refrigerator and allow to freeze to a mush (about 30 minutes). Stir thoroughly at this point to break any large ice crystals then freeze for a further 30 minutes before stirring briskly once again. Now leave to freeze completely (at least 3 hours) before serving. |
