Elderberries have a truly amazing taste and elderberry cordial is probably one of the most flavoursome you can make. This fruit is also packed full of vitamin C. However, as elderberries contain a natural yeast you need to boil very well to kill this, or your cordial will ferment and spoil. Ingredients
2kg elderberry bunches (the whole fruit spray)
Elderberry Cordial Preparation:Method:Wash the fruit thoroughly (there is no deed to remove the fruit from their sprays) then add to a large non-reactive saucepan. Just cover with cold water then bring to a boil, reduce to a simmer and cook for about 25 minutes, or until the fruit are completely soft. During the final 10 minutes of cooking mash the fruit against the sides of the pan. Line a sieve or colander with muslin and pour in the fruit mix. Press down with a wooden spoon to extract as much juice as possible then wring the cloth. Measure the volume of liquid then pour into a clean saucepan along with 100g sugar to every 100ml juice and 5 cloves to every 100ml liquid. Add freshly-grated nutmeg to taste then bring the mixture to a boil and continue boiling for 10 minutes. Remove the cloves with a slotted spoon (or tie in a muslin bag) then pour the cordial into sterilized bottles (I have clip-top Italian sparkling wine bottles I've saved for this). Store in a cool, dark, place and drink quite quickly (however, if you have made it carefully and made certain everything was sterile it should keep until Christmas). For me, this is best served mixed with orange juice over crushed ice.
