Eijjat Kausa
(Courgette Fritters) Recipe

Origin: Libya      Period: Traditional

Ingredients:

140g plain flour
1 tsp salt
1 tsp chilli powder
1 tsp baking powder
2 courgettes (zucchini), grated
3 eggs, beaten
1 onion, finely chopped
1/2 bunch coriander (cilantro) leaves, chopped
oil for frying

(Courgette Fritters) Preparation:


Method:

Sift together the flour, salt and spices into a bowl. In a separate bowl, combine the courgettes, onions and coriander along with 3 tbsp water. Stir the flour mixture into the vegetable mix then add the beaten eggs and whisk together until smooth.

Add oil to a frying pan and when hot drop the courgette mixture by the dessert spoon into the pan. Fry for about 3 minutes per side, or until lightly golden and cooked through. Drain on kitchen paper and serve with hot sauce.
