This is the classic Egyptian form of smen (Arabic ghee) that can be used in any North African or Middle Eastern recipe calling for smen. Ingredients:
100g butter
Egyptian Smen Preparation:Method:Combine the butter and margarine in a small heavy-based pan and allow to melt gently and combine. Bring to a simmer and allow to cook gently until transparent. Use the lowest heat you can and watch the mix carefully to ensure it does not scorch, or it will be ruined. Once clear take off the heat and set aside to cool. Pour the cold mixture through a sieve lined with muslin or cheesecloth and store the clarified smen in a clean jar in the refrigerator. |
