Origin: Nigeria      Period: Traditional

Eba is the Nigerian equivalent of FuFu, made with gari (fermented and dried cassava).

Ingredients

2l water
900g gari

Eba Preparation:


Method:

Bring the water to a boil in a large pot. Sprinkle half the gari on top and stir to mix. Whilst still stirring, add the remaining gari and continue to cook, stirring all the while until the mixture reaches the consistency of mashed potatoes.

This is a staple dish that can be used with any West African soup or stew.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
