Easy Easter Bunny Cupcakes Recipe

Origin: America      Period: Traditional

Ingredients:

200g sugar
100g butter; softened
2 eggs
210g fine cake flour, sifted
2 tsp baking powder
1/2 tsp salt
120ml milk
1 tsp vanilla extract
Easy Easter Bunny icing
Smarties or M&Ms, to decorate
Liquiorice or Fruit Roll-ups, to decorate
pink marshmallows, to decorate

Easy Easter Bunny Cupcakes Preparation:


Method:

Beat together the butter and sugar until pale and creamy then add the eggs one at a time and beat thoroughly to combine after each addition. Now sift together the flour, baking powder and salt into a bowl. Mix together the milk and vanilla extract in another bowl. Add the flour mix alternately with the milk mix to the creamed mixture and beat thoroughly to form a smooth batter.

Spoon the batter into large greased or paper-lined muffin cups (fill no more than 3/4 full) then transfer to an oven pre-heated to 180°C and bake for aobut 16 minutes, or until golden brown and a skewer inserted into the centre emerges cleanly. Transfer to a wire rack and cook before covering the tops with the icing (frosting) then form a bunny face as follows: Use Smarties or M&Ms for eyes, liquorice or sliced fruit roll-ups for whiskers then cut pink marshmallows into quarters and use for ears.
