Easter Peanut Butter Eggs Recipe

Origin: America      Period: Traditional

Ingredients:

2 eggs, well beaten
1/8 tsp salt
350g (about) peanut butter
800g (about) icing sugar
1 tsp vanilla extract
500g chocolate bar

Easter Peanut Butter Eggs Preparation:


Method:

Whisk the eggs in a bowl then beat in the salt, followed by the peanut butter, then the sugar and finally the vanilla extract. Bring the mixture together as a firm dough then take pieces and shape into eggs (whatever size you prefer).

Melt the chocolate in a bain-marie (double boiler) then take off the heat, allow to cool slightly and dip the peanut butter eggs in this until evenly coatd. Allow to cool and harden on greaseproof (waxed) paper before serving.
