East African Shrimp Curry Recipe

Origin: East Africa      Period: Traditional

Ingredients:

200g chopped onion
1 tsp garlic powder
1 tbsp curry powder
1 tsp turmeric
1/2 tsp chilli powder
60g butter
250ml coconut cream
900g prawns, peeled and raw
400g diced potatoes
250ml water
60ml lemon juice
250ml coconut cream

East African Shrimp Curry Preparation:


Method:

Fry the chopped onion along with the garlic powder, curry powder, turmeric, salt and chilli powder in the butter until the onion has just softened then add 250ml coconut cream, prawns, potatoes and water. Simmer until the potatoes are tender (about 20 minutes). Make sure that the pan is tightly covered.

Add the lemon juice and remaining coconut cream and cook until the mixture thickens (about 10 to 15 minutes). Serve hot on a bed of rice.

Typically this dish is served with accompaniments such as fried onion rings, chopped bananas, chopped cucumbers, raisins, pineapple chutney and shredded coconut.
