Dressed Cabbage Recipe

Origin: Ireland      Period: Traditional

Ingredients:

1 head of cabbage, shredded
4 tbsp butter
3 tbsp bacon stock (or water)
1 pinch of freshly-grated nutmeg (or mace)
1/2 tsp plain flour
freshly-ground black pepper, to taste

Dressed Cabbage Preparation:


Method:

Melt half the butter in a heavy-based pan then add the cabbage and toss until completely coated in the butter. Add the bacon stock then cover the pan and cook gently for about 20 minutes, or until the liquid has disappeared and the cabbage is tender.

Season with the nutmeg or mace then scatter the flour over the top and stir thoroughly to combine. Now add the remaining butter and toss until melted. Season with pepper and taste.
