(Fiery Potato Stew) Recipe

Origin: Eritrea      Period: Traditional

Ingredients:

2 tbsp olive oil
1 medium onion, chopped
4 tsp Berbere spice
6 medium potatoes, cubed
1 small tin tomato paste
1 tbsp salt
1l chicken stock

(Fiery Potato Stew) Preparation:


Method:

Fry the onions in oil for 5 minutes then add the berbere spice and potatoes and cook for a further 5 minutes. Add the chicken stock and simmer for 10 minutes before adding the tomato paste, season to taste and simmer for a further 10 minutes.

Serve with Taita.
