Devilled Potatoes Recipe

Origin: Britain      Period: Traditional

Ingredients:

300g waxy potatoes
2 egg yolks, beaten
2 tbsp butter
1 tbsp prepared mustard (English for preference)
1 tbsp vinegar
salt, to taste
cayenne pepper, to taste

Devilled Potatoes Preparation:


Method:

Scrub the potatoes (but do not peel) then bring a pan of lightly-salted water to a boil before adding the potatoes and boiling them for about 25 minutes, or until just tender. Drain then set aside to cool until cold enough to handle before peeling.

Melt the butter in a deep frying pan (or skillet) then add the mustard, salt and cayenne pepper. Stir to combine then add the vinegar. Cook the mixture, stirring frequently, for 3 or 4 minutes then add the potatoes (whole) and stir in the beaten egg yolks. Continue cooking until the mixture thickens and serve immediately.
