Date and Banana Mix Recipe

Origin: Burundi      Period: Traditional

Ingredients:

250g butter
200ml Sugar
2 eggs
500ml flour
1 pinch salt
2 tsp baking powder
4 bananas
250g dates
15ml melted butter
1 tsp cinnamon
2 tbsp Sugar

Date and Banana Mix Preparation:


Method:

Cream together the butter and sugar until light and fluffy. Beat the eggs into this mixture one at a time then add the flour, salt and baking powder. Mix well and place half the mixture into a well-greased 22 x 30cm baking dish. Cover this dough with the sliced bananas and chopped dates and top with the remaining dough.

Place in the centre of an oven pre-heated to 180°C and bake for half an hour until golden brown. Remove from the oven, brush the top with melted butter then mix the sugar and cinnamon and sprinkle over the top. Serve warm.
