Daomoda Recipe

Origin: Gambia      Period: Traditional

Daomoda (also known as Domodah and Domoda) is the Gambia's version of the ubiquitous groundnut stew.

Ingredients:

450g stewing meat
1 onion, chopped
1 garlic clove, minced
4 tomatoes, chopped
1 maggi cube or a bouillon cube with coriander and cumin
squash or aubergine (eggplant) peeled and cubed
1 hot chilli pepper, de-seeded and chopped
juice of 1 lemon
350g peanut butter
salt, black pepper and cayenne pepper to taste

Daomoda Preparation:


Method:

Heat the oil in a large pan and brown the meat in this along with the onions. When the onions have softened add all the remaining ingredients (except the peanut butter). Add just enough water to cover then bring to a boil. Reduce the heat and simmer until everything is done (about 20 minutes) then stir-in the peanut butter. Continue to simmer on a low heat for ten minutes, stirring often.

Adjust the seasoning and serve on a bed of rice.
