Dabo Kolo
(Crunchy Spice Bites) Recipe

Origin: Ethiopia      Period: Traditional

Ingredients

380g unbleached white flour
2 tbsp Berbere spice
1 tbsp sugar
1½ tsp salt
60ml groundnut oil

(Crunchy Spice Bites) Preparation:


Method:

Combine the flour, Berbere spice, sugar and salt in a bowl. Gradually mix-in 160ml of water until a thick paste has formed. Tip the mixture onto a floured surface and knead until you have a stiff dough. Make a well in the centre of the dough ball and pour the oil in. Fold the dough over the oil and knead for a further 5 minutes. Cover the dough with a damp cloth to keep moist then tear-off chunks you can roll into 0.6cm round strips.

Cut the strips into 1cm long pieces (using scissors), place on a greased baking tray and bake in an oven pre-heated to 180°C for 20–30 minutes, until crisp (turn two or three times to ensure even browning). Allow to cool completely and store in an air-tight container.
