Cucumber and Courgette Salad Recipe

Origin: Cote dIvoire      Period: Traditional

Ingredients:

2 medium cucumbers, scored with a fork and sliced very thinly
2 medium courgettes (zucchini), scored with a fork and sliced very thinly
120ml white wine vinegar
4 tbsp sugar
250ml hot water
1 tbsp salt
1 tsp coarsely-ground black pepper
1 tsp crushed chilli flakes

Cucumber and Courgette Salad Preparation:


Method:

In a 2l bowl arrange alternating layers of cucumber and courgette. Blend the vinegar, sugar, hot water, salt, black pepper and chilli flakes together and pour over the layers of cucumbers and courgettes. Allow to marinate for at least 1 hour before serving.
