Crockpot Brunswick Stew Recipe

Origin: America      Period: Traditional

Ingredients:

1 chicken (about 1.5kg) cut into serving portions
2l water
1 onion, chopped
350g cooked ham, cubed
3 potatoes, diced
1kg tinned tomatoes, chopped
300g cooked lima beans
300g frozen sweetcorn
2 tsp salt
1 tsp sugar
1/4 tsp black pepper
1/2 tsp salt

Crockpot Brunswick Stew Preparation:


Method:

Combine the chicken, onion, ham and potatoes with the water in a crockpot. Cover and cook on low for about 4 1/2 hours, or until the chicken is done. Remove the chicken from the broth, allow to cool a little then strip the meat from the bones.

Return the meat to the pot then add the tomatoes, beans, sweetcorn, salt, sugar and black pepper. Cover and cook on high for 1 hour. Serve hot.
