Crockpot Brunch Casserole Recipe

Origin: America      Period: Traditional

Ingredients:

675g minced beef
1 onion, finely chopped
2 tbsp olive oil or butter
2 garlic cloves, minced
120g button mushrooms
2 tsp salt
1/2 tsp freshly-grated nutmeg
1/2 tsp dried oregano, crumbled
200g spinach, washed and shredded
3 tbsp flour
6 eggs, beaten
60ml milk, scalded
120g mature Cheddar cheese, grated

Crockpot Brunch Casserole Preparation:


Method:

Add the olive oil to a frying pan and use to lightly brown the beef and onions. Drain well and transfer to a bowl. Use a little of the oil from the pan to fry the mushrooms until nicely browned. Transfer the meat to a well-greased crockpot and stir-in the mushrooms then stir-in all the remaining ingredients (except the eggs, milk and cheese). Stir until well blended then beat together the eggs and milk and pour over the ingredients in the crockpot. Stir well then dust with a little more nutmeg.

Cover and cook on low for about 10 hours (essentially over night), until firm. Just before serving sprinkle the cheese on top.
