Creamy Paprika Chicken Recipe

Origin: South Africa      Period: Traditional

Ingredients:

1 large chicken, cut into 8 serving pieces
1 large onion, chopped
1 garlic clove, chopped
3 large leeks, chopped
250g tomato purée
120ml white wine
60ml sour cream
1 tbsp butter
1 bay leaf
1/2 bunch parsley, chopped
2 tsp salt
1 tbsp paprika
1 tsp freshly-ground black pepper
chopped parsley, to garnish

Creamy Paprika Chicken Preparation:


Method:

Whisk together the wine and tomato purée until smooth then pour into a pan and gently bring to a boil.

Meanwhile, add a little oil to a pan or wok and use to brown the chicken before adding the onion and garlic. Continue frying for about 12 minutes, or until the onion is golden then add the bayleaf, parsley, salt, paprika and black pepper. Fry for 1 minute to combine then stir-in the wine and tomato mixture, bring to a boil, reduce to a simmer, cover and cook for 20 minutes.

Add the leeks and simmer, covered, for 20 minutes more. Take the mixture off the heat, stir-in the sour cream and serve on a bed of rice, garnished with chopped parsley.
