Cranberry and Chocolate Muesli Bars Recipe

Origin: New Zealand      Period: Modern

Ingredients

250g toasted muesli
240g rice crispies
50g shredded coconut
50g chopped nuts
175g sweetened dried cranberries
125g butter
80ml honey
80ml peanut butter
80g chocolate chips

Cranberry and Chocolate Muesli Bars Preparation:


Method:

Combine the muesli, rice crispies, coconut, nuts and half of the cranberries in a bowl. Place butter, honey and peanut butter in a saucepan, stir over heat until butter is melted then bring to the boil and simmer for 5 minutes. Stir honey mixture into dry ingredients and mix well then press into a lightly-greased 20 x 30cm slice tin. Sprinkle the top with the remaining cranberries and chocolate chips.

Allow to cool completely then cut into bar-shapes.
