Ingredients:
300g fresh cranberries
Cranberry Chocolate Ice Cream Preparation:Method:Combine the cranberries and orange juice in a medium saucepan. Place over medium heat and cook for between 8 and 10 minutes, or until the cranberries 'pop'. Take off the heat, allow to cool slightly then place in a blender along with the almond extract and pulse for about 4 minutes. Transfer to a bowl and set aside to cool as you prepare the vanilla ice cream mix. Combine the cranberry mix with the vanilla ice cream mix and stir to combine then place in the bowl of an ice cream machine and churn for 10 minutes before adding the chocolate chips. Keep churning, according to the manufacturer's instructions, until the ice cream is ready then transfer to a plastic container and freeze. |
