How to Make: Portuguese Rice

Ingredients

2 tbsp olive oil
3 garlic cloves, crushed
2 bunches collard greens (about 1kg), washed and shredded
360ml Spanish-style beer
1 tsp salt

(Portuguese Rice) Preparation:


Method:

Add the oil to a deep frying pan or skillet over medium heat. When hot add the garlic and fry for about 2 minutes before stirring-in the collard greens. Fry for about 1 minute then stir-in the beer and cook, stirring constantly until the greens are wilted and tender (about 15 minutes). Season with the salt and serve immediately.
