Ingredients:
1 uncooked country ham (about 9.5kg)
Country Ham with Brown Sugar Coating Preparation:Method:Place the ham in a large bowl or other container, cover with water and set aside to soak for 24 hours. Drain after this time then scrub the ham with a stiff brush dipped in warm water and rinse well. Place in a large casserole or stock pot then add the apple juice before pouring over enough boiling water to cover the meat. Bring the mixture to a boil, reduce to a simmer then cover and cook gently for about 2 hours, or until the meat is cooked through. Take off the heat and set aside to cool for 3 hours (do not remove the ham). Trim the skin from the ham then place, fat side up, on a rack in a shallow roasting tin. Sprinkle the fat with ground cloves then combine the brown sugar and sherry and brush over the ham. Transfer to an oven pre-heated to 210°C and roast for about 15 minutes, or until the coating is golden and crusty (the ham itself will be cool). Slice thinly and serve. |
