Coriander Pesto Recipe

Origin: Fusion      Period: Traditional

Ingredients:

100g fresh coriander (cilantro) leaves, chopped
30g fresh flat-leaf parsley leaves, chopped
2 garlic cloves, coarsely chopped
2 tbsp pine nuts
35g freshly-grated Parmesan cheese
100ml olive oil

Coriander Pesto Preparation:


Method:

Combine all the ingredients in a food processor and pulse until they form a smooth paste. Either use immediately or store in a jar in the refrigerator.
