Cooked Red Wine Marinade Recipe

Origin: France      Period: Traditional

This is a classic French red wine marinade typically used for game when the meat cannot be marinated in a standard marinade for a period of days.

Ingredients:

3 tbsp olive oil
1 onion, finely chopped
2 shallots, finely chopped
1 carrot, finely diced
2 celery sticks, finely diced
2 garlic cloves, minced
1 bay leaf
bunch of parsley stalks, roughly chopped
2 sprigs thyme
6 black peppercorns
2 cloves
4 juniper berries
60ml red wine vinegar
400ml red wine
2 tbsp brandy

Cooked Red Wine Marinade Preparation:


Method:

Add the oil to a pan and when hot stir-in the vegetables, herbs and spices. Fry for about 4 minutes then add the brandy, vinegar and wine. Bring to a simmer, cover and cook for about 20 minutes. Take off the heat and allow to cool completely before using to marinate the meat.
